Week 5... almost 6

So I think I'm one of the worst bloggers ever. I told you I would make a meal every Saturday and post it. Well I broke that. This past weekend I was super sick, as I posted, and so I didn't make my meal until Sunday. Also, I'm not posting it until almost the next weekend. I'm not very good at this.

I've also made a realization, you may be looking at my pictures and thinking, "This looks bloody good! But there's no recipe!" Please ignore my use of bloody. I've been watching a tv show with a British dude who says bloody a lot. So I have decided to post recipes! Here goes my first attempt with less then normal pictures and a recipe.

We made beef pitas with yogurt sauce.
Or if you're plain like me you can whip up some sour cream to go with it.

The for dessert we had chocolate covered cheesecake bites. There were oh so yummy.


Beef Pitas w/Yogurt Sauce

1 cup plain yogurt
1/4 minced parsley
1/2 tsp minced garlic
1/8 tsp salt
1 tsp oregano
1 tsp rosemary
1/2 tsp salt
1/4 tsp pepper
1 lb steak
1 onion
4 tsp olive oil (I used extra virgin)
4 pitas
(I added sour cream. I got plain old Daisy and then just whipped it until it because a nice creamy consistency. I also added lettuce to my pitas. I just grabbed a head of iceberg and shredded it to the size I wanted.)
1. For sauce, combine yogurt, parsley, garlic, and salt. Refrigerate until you need it.
2. Get a ziploc bag and combine  oregano, rosemary, salt, pepper and beef. Try to get all of the beef covered evenly so you don't get a big bite of oregano on one piece and salt the next.
3. Brown the onions in the oil. Take them out then saute the beef. Put all of the above on a pita and viola!

Chocolate-covered Cheesecake Squares
1 cup graham cracker crumbs
1/4 cup melted butter
16oz cream cheese
1/2 cup sugar
1/4 cup sour cream
2 eggs
1/2 tsp vanilla extract
24 oz chocolate (I used semisweet but it was a little too bitter to me. I would recommend using milk chocolate)
3 tbl shortening

1. Line a 9-inch square baking pan with foil and grease it. Combine the crumbs and better and press them in.
2. For the filling, beat the cream cheese, sugar, and sour cream. Then add the eggs and vanilla. Pour it over the crust.
3. Bake at 325 for 35-40 minutes. Let it cool, then refrigerate it, then freeze it overnight, or about 6 hours.
4. For the coating, melt the chocolate and the shortening in the microwave until it's melted.
5. Lift the cheesecake out of the pan by using the foil and cut it into bite size squares.
6. Now all that's left is to dip them in the chocolate and enjoy!

First Day of School

It seems like everyone is going back to school! Jaxon started preschool this last week. He actually went for a few months last school year but this is his first "first day of schoool" experience. Everyone has asked how he's doing and it's kind of funny. The question almost seems odd to me. He LOVES school. He gets to go outside of the house for 2 hours, 3 days a week and see his friends and play with his teachers. 2 Year Anniversary

May 15th is our anniversary. For out two year anniversary we went to the Grand Canyon. It really couldn't have been greater. Here are some of the pictures from this past weekend. This was our cabin and the view from our window We learned how to lasso and saw tadpoles Relaxed and enjoyed the view I do have some travel tips for you. If a place if called "Out of this World", you really should stop and try their food. Eat a burger, take a picture, order a cake (try to be better than me and snap a picture before you scarf it down), also, order a pizza to take back to your room. It'll be worth it. Trust me.

Pake

When did life change so much? One kid become two? Stay at mom become stay at mom and worker? Errands become errands and more errands because they are never finished? Seven become seven and eleven? Wait... I may have gotten a little off track with that last one. Life is always so crazy it seems that one you finally get used to it, something changes. That's what pake is. Something you're not used to but it can totally work. A pake: half pie, half cake. Don't worry, we're not talking apple pie with frosting. It's a pie crust with red velvet cake and cream cheese frosting. Now this is a learning lesson. The original recipe I used is from  Lifetime . It was originally made on a show called "Drop Dead Diva". Total chic show but it was fun. The only thing it that whatever world they cook in, cakes rise several inches. Here in the normal world?
