Big Meals, Small Stomachs

Just recently I made plans to have company over. In order to protect their identity I will not reveal who they are. But I will say that the stood up my dinner. MY dinner, can you imagine? Needless to say my dinner's feelings were hurt. But, I will prevail. I made it anyway, it turned out quite tasty.

Here is the prep work for the lovely treat.
Aren't they cute? Once they're like this you wrap them like a messy present, dip them in butter, and roll them in panko bread crumbs. They look yummy.
Bake them, cover them in gravy, and enjoy!
Now, here is the problem with this wonderful meal. I was gonna make this awesome dessert and eat it... Small problem. I didn't have any cocoa powder. I tried to just add some extra chocolate chips. This did not work. I repeat this did NOT work. Don't try this at home boys and girls. Just go out and buy the cocoa powder.
Here is the recipe for the chicken pillows, I'm withholding the recipe for the cake until I can try it myself. Keep in mind, these will fill you up. They make 8 and I only had room for one. I hope you like them!

Chicken Pillows:
8oz cream cheese
1/2 cup sour cream
3 cooked chicken breasts
salt and pepper to season
2 cans pillbury crescent rolls (16 total)
1/4 cup melted butter
italian bread crumbs (I used panko breadcrumbs because I was out of italian)
1 can cream of chicken soup
1 package gravy mix
 
Preheat oven to 350 degrees.

Mix cream cheese and sour cream until well combined. Stir in salt, pepper, and diced chicken.

Using Pillsbury crescent rolls, take 2 triangular rolls and push together at perforated seam to make into a square. Make sure you seal the perforations well so your filling doesn't come out. Put about 3 tablespoons of chicken mixture in the center of each square. Fold the dough corners to the center over the chicken mixture forming a pillow.

Dip each pillow in melted butter on both sides. Roll in bread crumbs on both sides. Shake excess crumbs off. Place chicken pillow on cookie sheet and bake at 350 degrees for 20-25 minutes.

Make gravy by mixing one package of chicken gravy mix, one can of cream of chicken soup and 3/4 can of water in a small pot. Mix together and heat until warm. Serve chicken pillows with gravy poured over top.

First Day of School

It seems like everyone is going back to school! Jaxon started preschool this last week. He actually went for a few months last school year but this is his first "first day of schoool" experience. Everyone has asked how he's doing and it's kind of funny. The question almost seems odd to me. He LOVES school. 2 Year Anniversary

May 15th is our anniversary. For out two year anniversary we went to the Grand Canyon. It really couldn't have been greater. Here are some of the pictures from this past weekend. This was our cabin and the view from our window We learned how to lasso and saw tadpoles Relaxed and enjoyed the view I do have some travel tips for you. If a place if called "Out of this World", you really should stop and try their food. Eat a burger, take a picture, order a cake (try to be better than me and snap a picture before you scarf it down), also, order a pizza to take back to your room. It'll be worth it. Trust me.

Pake

When did life change so much? One kid become two? Stay at mom become stay at mom and worker? Errands become errands and more errands because they are never finished? Seven become seven and eleven? Wait... I may have gotten a little off track with that last one. Life is always so crazy it seems that one you finally get used to it, something changes. That's what pake is. Something you're not used to but it can totally work. A pake: half pie, half cake. Don't worry, we're not talking apple pie with frosting. It's a pie crust with red velvet cake and cream cheese frosting. Now this is a learning lesson. The original recipe I used is from  Lifetime .
