Hamburgers and Fries

It's a pretty classic meal. It's not easy to make though. I made somewhat healthy fries this past weekend. The only thing that wasn't really healthy about them was the fact that they were made out of potatoes. They tasted SO good. Don't worry I'll post the recipe and the pictures. I also made burgers. The best part however was the dessert. The surprise will come at the end.

Homemade French Fries
This will make about 5 peoples worth, or three 21 year old guys
3 potatoes cut into fries or wedges
4 tbl minced garlic
6 tbl extra virgin olive oil
3 tbl cornstarch
Salt and Pepper to season
Paprika (this is optional but I did it so I'd recommend it)
1. Put your oil and garlic in a large bowl and microwave it for about a minute.
2. Using a pastry brush transfer most of the oil to a baking sheet. I didn't use enough of it so quite a few of mine stuck to the bottom.
3. Put the french fries in the bowl. Distribute the garlic and the oil. Cover and microwave for 3 minutes. Shake and microwave for another minute thirty.
4. Mix in the cornstarch and seasons. I covered it with press and seal and shook it for a bit.
3. Put them on the baking sheet in as few layers as possible. Bake at 400F for about an hour. Until they're nice and well... like a french fry.
Hamburgers
Hamburgers can be made pretty much however you want but I'll just let you know how I made my mine. Also, I don't have a picture of the final meat cooked but I'll give you the raw meat picture.
1 lb hamburger (I used 85/15 because the fat gives it more flavor)
Breadcrumbs (Not a measured amount just sprinkle it around)
1 egg
Cheese cubes (very tiny. These go in the meat and melt. Makes the meat nice and cheesy)
Salt and Pepper to season
1. Put your defrosted meat on the counter and mix everything together.
2. Form the meat in a large ball and in half. Cut each the halves in half for 4 equal size burgers.
3. Grill to your liking. I put cheese on top of mine but that's up to you.

Now for the best thing. I made chocolate cupcakes with chocolate chip cookies on the bottom! It's SO good. It's not very complicated either.

Chocolate Surprise Cupcakes
1 box of Devil's Food Cake mix
12 chocolate chip cookies
Criso or Pam to grease the muffin tins
1. Make the box mix like it instructs. Grease the muffin cups, I didn't use the liner because I didn't like how it would crease the cupcakes when I would be done.
2. Place the cookies in the bottom of each muffin then pour the batter over top and bake as instructed. You don't need to change anything.
Now if you only bake 12 you'll have lots of extra batter. This is what I recommend, a cake of devil's food.
But here are the brownies baking, remember to try no to eat to much batter.

Here is your final product as just a cupcake and how awesome the surprise will on the bottom

2 Year Anniversary

May 15th is our anniversary. For out two year anniversary we went to the Grand Canyon. It really couldn't have been greater. Here are some of the pictures from this past weekend. If a place if called "Out of this World", you really should stop and try their food. First Day of School

It seems like everyone is going back to school! Jaxon started preschool this last week. He actually went for a few months last school year but this is his first "first day of schoool" experience. Everyone has asked how he's doing and it's kind of funny. The question almost seems odd to me. He LOVES school. He gets to go outside of the house for 2 hours, 3 days a week and see his friends and play with his teachers. Yes, I understand it's school and he's learning, but at preschool age it's a lot of fun for him. Here's some fun photos from his first day. How cute is he with his little backpack? Pake

When did life change so much? One kid become two? Stay at mom become stay at mom and worker? Errands become errands and more errands because they are never finished? Seven become seven and eleven? Wait... I may have gotten a little off track with that last one. Life is always so crazy it seems that one you finally get used to it, something changes. That's what pake is. Something you're not used to but it can totally work. A pake: half pie, half cake. Don't worry, we're not talking apple pie with frosting. It's a pie crust with red velvet cake and cream cheese frosting. Now this is a learning lesson. The original recipe I used is from  Lifetime . It was originally made on a show called "Drop Dead Diva". Total chic show but it was fun. The only thing it that whatever world they cook in, cakes rise several inches. Here in the normal world?
