40 Clove Garlic Chicken

Now don't let the title scary you away. 40 cloves sounds like a lot... Who am I trying to fool? 40 cloves is a lot. But trust me on this. It doesn't taste like it! Actually, it just gives it a lovely flavor of garlic. I normally don't post a lot of picture but I just have to show you how easy this is.

Start with some garlic bulbs. You only need about 3.


Now take them apart so you have 40 cloves.


This is the part that is not for the feeble. You have to peel all 40 cloves. After about 5 I wanted to quit but I persevered and so must you!


Admire the after math. It makes you feel productive.

Brown your chicken, toss everything with olive oil and some herbs then place in a baking dish.

Cook then take out of the oven. Now see your lovely cooked meal and try to take a picture that does not come out yellow.

Now that you've seen how easy that was I have another recipe to share. Getting the smell of garlic out of your cutting board and your hands is near impossible. You've experienced this right? When you wash the cutting board and then you take it out and it still smells like garlic? Not to mention your fingers smell like garlic for days. Easy fix now! Take some sugar and some lemon juice. It makes a great scrub that takes the smell off your hands and cleans your cutting boards.

40 Clove Garic Chicken
4 chicken breasts
1/2 cup and 2tbl olive oil
40 peeled garlic cloves
salt and pepper
assortment of herbs (i used basil, parsley, and thyme i think?)

Preheat oven to 350F. Season chicken with salt and pepper. Toss with a 2 tablespoons olive oil and brown on both sides in a skillet over high heat. Remove from heat, add oil, herbs, and garlic cloves. Cover and bake for an hour. Serve warm.

Lemon and Sugar Scrub
2 tbl sugar
1 tbl lemon juice

This is an exact science. I liked it a little grittier so I probably messed with the ratio a little. Just mix the two together until you get the consistency that you like!

2 Year Anniversary

May 15th is our anniversary. For out two year anniversary we went to the Grand Canyon. It really couldn't have been greater. Here are some of the pictures from this past weekend. First Day of School

It seems like everyone is going back to school! Jaxon started preschool this last week. He actually went for a few months last school year but this is his first "first day of schoool" experience. Everyone has asked how he's doing and it's kind of funny. The question almost seems odd to me. He LOVES school. Pake

When did life change so much? One kid become two? Stay at mom become stay at mom and worker? Errands become errands and more errands because they are never finished? Seven become seven and eleven? Wait... I may have gotten a little off track with that last one. Life is always so crazy it seems that one you finally get used to it, something changes. That's what pake is. Something you're not used to but it can totally work. A pake: half pie, half cake. Don't worry, we're not talking apple pie with frosting.
