New Spaghetti and Meatballs

Does anyone else here panic when company is coming over?


I keep a generally clean house but for some reason when company is coming over nothing is clean, my house is a mess, the dinner I had planned isn't good enough.


Lucky for me I had a secret recipe hiding in my sleeve. Not literally. That would be weird.


I also happened to have flowers on hand which makes everything looks fancier.


I have this amazing recipe I've been saving and it finally paid off. I also took some fancy pictures for you all to see.


We have awesome onion and garlic.
Good ingredients for meatballs.
Also, am I the only one who gets super impatient when spaghetti cooks? Do you take a bite every other minute to see if it's done? No? Whatever. I don't do that either.




This recipe came from a retreat I went to. It was hosted by Homefries. They have great podcasts hosted by even greater people. This was put on by Joy the Baker and Tracy from Shutterbean. This recipe is amazing. I had it at the retreat. Make this meal, admit how amazing it is. Then go to Joy and Tracy's website and cyber stalk them like I do.


No biggie. Lots of people do it. As long as you don't actually stalk them I think it's ok.


Simple Spaghetti Sauce
2 tbl olive oil
1 1/2 cups chopped onion
2 garlic cloves
1/2 tsp chili flakes
3 tbl red wine
2 28 oz-cans diced tomatoes in juice
4 tbl fresh basil

Heat oil in heavy large pot over medium-low heat. Add onion; saute until golden. about 10 minutes. Add garlic and chili flakes and stir 1 minute. Add red wine to deglaze the pan. When wine has cooked down, add tomates with juices and 2 tablespoons basil; bring to boil. Reduce heat; simmer until sauce thickens, breaking up tomates with fork., about 1 hour. Mix in 2 tablespoons basil. Season with salt to taste.

Sicilian Meatballs
2/3 cup seasoned breadcrumbs
3 tble milk
1/3 cup freshly grated Parmesam cheese
1/4 cup finely chopped onion
1 large egg
1 garlic clove
1/4 tsp crush red chili flakes
1 pound sweet Italian sausages, casings removed
2 tbl dried currants


Preheat oven to 350F. Lightly oil baking sheet. Set aside. Mix breadcrumbs and milk in medium bowl; let stand 5 minutes. Mix in Parmesan, onion, egg, garlic, and chili flakes. Add sausage and currants. Use clean hands to incorporate all of the ingredients. Using wet hands, form mixture into 1 1/4 inch balls. Place on baking sheet. Bake until meatballs are light brown and cooked through, about 30 minutes. Add to sauce. Cook pasta in large pot of boiling salted water intil just tender but still firm to bite. Drain. Mound in dish. Bring sauce and meatballs to simmer. Spoon over pasta.


Keeps about 4 days in the frig.

2 Year Anniversary

May 15th is our anniversary. For out two year anniversary we went to the Grand Canyon. It really couldn't have been greater. Here are some of the pictures from this past weekend. If a place if called "Out of this World", you really should stop and try their food. Eat a burger, take a picture, order a cake (try to be better than me and snap a picture before you scarf it down), also, order a pizza to take back to your room. It'll be worth it. Trust me.

First Day of School

It seems like everyone is going back to school! Jaxon started preschool this last week. He actually went for a few months last school year but this is his first "first day of schoool" experience. Everyone has asked how he's doing and it's kind of funny. The question almost seems odd to me. He LOVES school. He gets to go outside of the house for 2 hours, 3 days a week and see his friends and play with his teachers. Yes, I understand it's school and he's learning, but at preschool age it's a lot of fun for him. Here's some fun photos from his first day. How cute is he with his little backpack? Pake

When did life change so much? One kid become two? Stay at mom become stay at mom and worker? Errands become errands and more errands because they are never finished? Seven become seven and eleven? Wait... I may have gotten a little off track with that last one. Life is always so crazy it seems that one you finally get used to it, something changes. That's what pake is. Something you're not used to but it can totally work. A pake: half pie, half cake. Don't worry, we're not talking apple pie with frosting. It's a pie crust with red velvet cake and cream cheese frosting. Now this is a learning lesson. The original recipe I used is from  Lifetime . It was originally made on a show called "Drop Dead Diva". Total chic show but it was fun. The only thing it that whatever world they cook in, cakes rise several inches. Here in the normal world?
