Philly Cheesesteak

I did say this would be a philly cheesesteak... Well I lied just a little bit. This is a wanna-be philly cheesesteak. The best way to describe it is a sloppy joe disguised as a philly cheesesteak.

There is a lot of cheese for this recipe though. I barely used more than half of it. When cooking it though it looks so yummy!

Now it's uses ground beef instead of strips of meat so your sandwich will look like this.

Doesn't that make you want to take a bite?


Or two? Or half of the sandwich before you can take a picture? My hubby loved this sandwich SO much. He actually cleaned his plate. All those crumbs you see? Yeah, gone. He picked them up and ate them. I don't think I've ever seen a plate so clean after dinner.

Here is the amazing recipe:
1 tbl olive oil
1 lb ground beef
1 garlic clove
1 cup beef stock
1 tbl butter
1 tbl flour
1 cup milk
1 cup provolone (either shredded or in small pieces)
some sort of roll for the sandwich

In large skillet, over medium-high heat add the oil and then brown the ground beef. Add the garlic. If you like bell peppers, or onions add them now and cook for another 3-4 minutes, until the vegetables start to get tender. Stir in the beef stock, season with salt and pepper, bring up to a bubble and cook about 2 minutes.

While the meat is cooking, melt the butter in a medium-size pot over medium-high heat. Stir in the flour and cook about 1 minute. Whisk in milk, bring up to a bubble and let thicken, about 2 minutes then stir in the cheese.

Scoop the meat onto your rolls and heap as much cheese as you want. It makes 4-6 servings.

2 Year Anniversary

May 15th is our anniversary. For out two year anniversary we went to the Grand Canyon. It really couldn't have been greater. Here are some of the pictures from this past weekend. If a place if called "Out of this World", you really should stop and try their food. Eat a burger, take a picture, order a cake (try to be better than me and snap a picture before you scarf it down), also, order a pizza to take back to your room. It'll be worth it. Trust me.

First Day of School

It seems like everyone is going back to school! Jaxon started preschool this last week. He actually went for a few months last school year but this is his first "first day of schoool" experience. Everyone has asked how he's doing and it's kind of funny. The question almost seems odd to me. He LOVES school. He gets to go outside of the house for 2 hours, 3 days a week and see his friends and play with his teachers. Pake

When did life change so much? One kid become two? Stay at mom become stay at mom and worker? Errands become errands and more errands because they are never finished? Seven become seven and eleven? Wait... I may have gotten a little off track with that last one. Life is always so crazy it seems that one you finally get used to it, something changes. That's what pake is. Something you're not used to but it can totally work. A pake: half pie, half cake. Don't worry, we're not talking apple pie with frosting.
